Tasting notes :
This wine shows a pretty pale yellow color with white gold shades.
The nose is a beautiful expression, with notes of white peach fruit and pear in particular.
The palate is full and round, we find some notes of white flesh fruits complemented by a floral touch (hawthorn) and mineral on the end of mouth.
This fresh and complex wine has a very nice depth.
This wine goes very well with, for example, a tuna sashimi, a sea bass in its coat of bacon and lime espuma, a rabbit with mushrooms and tarragon or a fresh goat cheese from the Cucuron goat farm.
Serving temperature : 11 °C.
The vineyard is about fifty years old and is located on the edge of the Aigue Brune. The soil brings minerality and complexity thanks to the limestone pebbles and pebbles of the Durance river.
Manual harvest. Sorting and pressing in whole bunches. Settling by the cold. Beginning of fermentation in vats then 100% in amphora after the tumultuous phase of the alcoholic fermentation.
Breeding in amphora for 3 months with regular stirring at the beginning of breeding then no intervention anymore.
Grape varieties: Chardonnay 80% and Viognier 20%
