Tasting notes:
This wine shows a very beautiful pale yellow color with green hues. The nose reveals a very beautiful aromatic intensity on the notes of exotic fruits (maracuja, guava) and citrus (yellow grapefruit) with mineral notes.
The palate is pleasant, on the freshness with however roundness in attack, we find the tones of the nose. This wine is distinguished by a very beautiful aromatic persistence.

This wine can be opened for the aperitif and then will fit perfectly with a bouillabaisse (fish soup) or grilled sea bass. On cheese, this white wine will ideally be associated with a brousse du Rove embellished with a touch of honey.

Vineyard
The vineyard is about fifty years old and is located on the edge of the Aigue Brune. The soil brings minerality and complexity thanks to the limestone pebbles and pebbles of the Durance river.
Mechanical harvest on the Rolle and manual on the Viognier. Stalking, destemming and cold skin maceration for 48 h. Pressing and settling by the cold. Fermentation in stainless steel tanks at 18 ° C. Aging on fine lees for 3 months with stirring at the beginning of breeding.

CHÂTEAU CONSTANTIN – AOP LUBERON RED
Tasting notes:
This wine has a very deep and intense ruby color.
The nose is very expressive and complex, we find notes of black fruits such as blackberry and black cherry mixed with small red berries such as cranberries.
The mouth is complex as well with silky tannins, we find the aromas present in the nose embellished by a note of sweet spices such as licorice and cinnamon.
This wine is characterized by a long aromatic persistence and length.

This wine will ideally pair with the lamb: it can be served on a rack of lamb marinated in rosemary for example, it will also support an association with meat stronger in taste such as a deer but also spicy dishes: why not a lamb curry?
Serving temperature: 15 °C.
Vineyard

Stemmed destalked wine.
Vinification in stainless steel and truncated wood vats.
Pre-fermentation maceration during 4-5 days, then vinification at 25-28 ° C with 4 sheds at the beginning of fermentation and then 1 to 2 pumpings over per day during 2 to 4 weeks. Finally, hot post fermentation maceration for 15 days.

Tasting notes:
This wine has a beautiful pale pink color with some light litchi reflections. The nose is delicate it opens on pretty aromas of red fruits such as fresh strawberry and gooseberry.
In the mouth, we find the red fruits complemented by notes of lemon – which give to this wine freshness and delicacy.

A perfect meal wine, it can fit with a poultry cooked with cream, but also dishes slightly spiced like a monkfish curry with coconut milk. With its freshness, this rosé wine can also be proposed as a dessert to join a citrus salad for example.
